Tuesday:
(I know it's a bit redundant to have potatoes 2 nights in a row but I needed a SIMPLE meal for Tuesday that I can prep during K's naptime and pop in the oven! J and I have our childbirth class from 7-10 so we need to be fed, cleaned up and out of the house by 6:30!)
Crunchy Baked Chicken (recipe below)

Thursday:
Honey Glazed Chicken Stirfry w/ lots of Veggies & Rice
Friday:
FROZEN PIZZA!!!
RECIPE:
This is one of my favorite recipes, mainly because you can do it with any type of chicken and it tastes DELICIOUS! This week, Albertsons had their chicken drumsticks on sale for $.99/lb so that's what we'll be doing this week!
Crunchy Baked Chicken Recipe
1 Egg
1 Tbsp Milk
1 can French-Fried Onions - crushed
3/4 c grated Parmesan Cheese
1/3 c Dry Bread Crumbs
1 tsp Paprika
1/2 tsp Salt
1/4 tsp Ground Pepper
For this weeknight, we'll be using about 3-4 lbs of chicken drumsticks
2 tbsp butter - melted
1. Combine egg & milk in shallow dish and whisk until blended.
2. Combine the onions, cheese, bread crumbs, paprika, salt, pepper and mix well.
3. Dip the chicken in the egg mixture. Rollin the bread crumb mixture to coat.
4. Arrange the chicken in a 9 x 13 baking dish (sprayed with cooking spray) and drizzle with the melted butter.
5. Bake at 350* for about 55-60 mns (time will obviously vary depending on what cut of meat you are using!) or until the chicken is fully cooked and registers 165* with a meat thermometer.
